The tri-tip roast is a smaller cut from the sirloin. It is thicker than a steak but thinner than most roasts with a triangle shape. Its marbling and tenderness make it a versatile cut. We cook ours on the smoker or BBQ throughout the summer months and it is one of our favorites!
