QUARTERS & HALVES

HOW TO ORDER IN BULK

By purchasing a quarter, half, or whole beef you get the most bang for your buck.

However, it is a bulk purchase and is much different than selecting one package of steaks to buy for dinner tonight.

Each year we offer a limited number of animals for bulk beef.

ABOUT THE WEIGHT

HANGING WEIGHT

Our bulk beef is sold on hanging weight which is the weight of the carcass in the butcher's cooler. All of our beef is dry-aged for a minimum of 14 days to provide tender and flavourful products.

TAKE HOME WEIGHT

Take-home weight is the weight of the beef products you will take home once it is cut & and wrapped at the butcher's.

Take-home weight is less than hanging weight because your butcher will cut out excess bone, and fat, and gristle off of your meat.

EACH ANIMAL IS UNIQUE

Each individual animal is unique. Hanging weight, and take-home weight, will vary depending on the age, size, sex, and breed of the animal among other factors.

Your take-home weight is approximately 65% of the hanging weight depending on your cutting instructions.

For example, requesting boneless steaks will reduce your take-home weight compared to ordering rib and t-bone steaks.

Whole Beef - A whole carcass averages 825 lbs hanging weight.

Half Beef -A half averages 412 lbs hanging weight.

Quarter Beef - A quarter averages 206 lbs hanging weight.
